The daily catch is inspected by the chefs and the very finest fish selected for the restaurant and osteria. Ingredients are treated with respect, and menus reflect the purity and simplicity of the seasons.

A classic example is the home-made Paccheri pasta served with fresh anchovies, tomatoes, and clams. Stone ground flour from the nearby wheat farm, tomatoes picked that day from the resort’s organic garden, the freshest fish and clams delivered daily by the local fishermen. Simple and flavoursome, yet, when combined with consciousness and care these products become something truly exceptional and wholly Sicilian.

Chef Guiseppe explains the importance of food heritage “I chose our suppliers one by one, picking from small local businesses and farms to make sure that all the ingredients are local, fresh and authentic. For example, we use raw wild honey from the Sicilian black bee, pork from the Nebrodi piglet, milk from the renowned Girgentana goat, Villalba lentils as well as ancient Sicilian grains such as Perciasacchi, which we use for our fresh homemade pasta.”
