Menus are created according to the seasons and the lodge’s own daily handpicked harvests. Chef Hannes Pignater personally oversees the farm, kitchen and herb gardens and selects quality ingredients when they are at their most flavoursome.
The lodge’s own farm produces organic grain, which is ground and transformed into delicious pasta and pastry dishes. There’s also an on-site beekeeper, who collects forest honey from the lodge beehives. To complement the homegrown ingredients local produce is also sourced from neighbouring traditional farms including Speck bacon, Wagyu and Chianina beef from free-range special-breed herds.
Throughout your stay at ADLER Lodge RITTEN you can savour the distinct flavours of the region from morning till night. Generous buffets are served both at breakfast and lunch with a la carte extras also available. However, the cuisine moves up to an entirely new level of gastronomy in the evenings, where dining is a sophisticated affair.
At dinner, the elegant panoramic restaurant offers an enticing la carte menu which is created daily by Chef Hannes Pignater according to his personal selection of the freshest ingredients.
In addition to the classic menu, the restaurant at ADLER Lodge RITTEN also features an innovative farm-to-table menu which communicates the authenticity of South Tyrol’s unique cuisine with an emphasis on 0km and slow food.
Signature dishes include parsley risotto with breadcrumbs of Schüttelbrot (a South Tyrolean crunchy flatbread with spices), and tortelli with Sauerkraut, smoked meat, and mustard. There’s an emphasis on raw and fresh food featuring fresh mountain herbs, of course, as well as pickles and preserves. For those with a sweet tooth, try the authentic dessert of Kaiserschmarrn, a type of scrambled crêpe served with icing sugar and apple jam or compote, as well as the spiral-shaped cakes of Strauben.
