2025 is the year for fun happenings at Canopy by Hilton Cancun La Isla.

Spring Equinox Package (March 19-21) – Every equinox, the sun of the late afternoon creates the illusion of a snake creeping slowly down the northern staircase at Chichén Itzá. Hilton Honors has partnered with Aeromexico Auctions to create an incredible package which members will bid their loyalty points in hopes of winning. Spring Travel Package (March 3 – April 30) – Soak up the sun with a trip to Cancun and forgo a mega resort with a stay at the more intimate Canopy Cancun. The hotel draws inspiration from the surrounding region with artwork from Cancun artists and restaurant menus highlighting seasonal, and regional produce and ingredients. Raíces Dinner with Chef Octavio Santiago (March 29) – Taste the heritage of the region with a special pop-up dinner with Michelin-recognized Chef Octavio Santiago of Cancun’s Kiosco Verde. The dinner, which takes place on Saturday, March 29, and is $1,800MX (approximately $86 USD) per person, is a five-course feast including cocktail pairings. Guests will enjoy live music and a fair with traditional Mexican games in Canopy Cancun’s Azulinda restaurant. Chef Santiago designed the menu with Canopy Cancun’s Executive Chef Miguel Estrada and it includes:
- Reina Clam and Shrimp in Yucatecan aguachile with chapulines and sweet chili paired with Heroico, a cocktail made with reposado tequila, sour orange juice, orange liqueur, agave syrup, beetroot juice, edible flowers, and beet salt
- Milpa Soup with fried zucchini flower filled with artisan quesillo cheese, mushrooms, corn, poblano chili, and fried garlic paired with Esperanza, a mezcal cocktail made with cucumber puree, chili syrup, lime juice, Tajin, and a cucumber skewer.
- Striped Bass Ikejime with butter mole, cauliflower puree, escamoles, and epazote sprouts or Mixiote of Short Rib served with yellow corn tortillas, spiced bean puree, and ant chicatana salsa. The cocktail pairing for the entree is the El Mexicano, made with 400 Conejos Mezcal, citrus juice, syrup, sea salt foam, and dehydrated grapefruit slice
- Charred Pineapple Sorbet served alongside the El Tama cocktail, made with white rum, tamarind pulp, sparkling wine, and mineral water
- Artisan Double Texture Cake made with mole chocolate, cheese flan, and mascarpone cheese mousse paired with the Arriero cocktail featuring cold brew coffee, Dalgona coffee, Torres 10 Brandy, cinnamon syrup, and an edible flower.
