Palmasola Welcomes Back Chef Horacio Ruiz
It is with great pleasure that Palmasola welcomes back Chef Horacio Ruiz to the helm of our kitchen! An award-winning Chef and proud native of Nayarit, with experience both nationally and internationally, Chef Horacio Ruiz, has returned to head the culinary team at Palmasola. Known locally as “Chef Lacho”, Ruiz has studied gastronomy in France, Belgium, and Mexico. He has worked in both Mexico and the United States.
“I left this area to manage several restaurant openings to include the five-star Hotel Cartesiano´s restaurant in Puebla and Mesa de Origen in Tepoztlán yet have now returned home after 10 years. I am very proud to be back at what I feel is the top private culinary operation in the area”, comments Chef Ruiz. A strong emphasis and knowledge about Mexico´s native ingredients and cuisine fused with international culinary techniques mark his signature style in the kitchen.
Ruiz continues to be very active with peers and the culinary movement in Mexico. He opened and consulted for restaurant La Rustica Sayulita, is an active member of the Vatel Culinary Club in Mexico, is a member of the Mexican chapter of the French Culinary Academy and is a founder and judge at Mentores MX – an organization that selects and supports young chefs for international competitions. “I have been working in kitchens since the age of 18 and continue to be passionate about learning and growing… and also giving back and supporting young talent”, explains Ruiz.
One of Chef Lacho´s most sought after dishes is the Tostada de Kampacho, which is a fresh take on a Mexican tostada created with white fish from Ensenada cured with corn and coconut oil and accompanied with a dry shrimp puree. Another favorite is his refreshing tomato salad crafted with a variety of handpicked local cherry tomatoes that are enhanced with an olive tapenade, dehydrated tomato and Mexican fresh cheese. A favorite soup is artfully made with Mexican corn truffle (huitlacoche) along with truffle oil and sautéed corn kernels.
