With this transformation, the renowned property introduces a new vision: “The Living Room of the Valley.” In partnership with acclaimed original design firm GGLO, this thoughtful evolution amplifies the property’s renowned warmth while incorporating refined modern touches throughout its celebrated spaces. The transformation features not only reimagined dining concepts but also artfully curated social spaces that honor the property’s deep connection to its storied wine country setting.
The refresh pays homage to The Allison’s original design narrative, which masterfully captured the Valley’s essence – from its ancient glacial formations to its verdant agricultural tapestry. Rich woods, patinated metals, and natural stones created a warm, restorative space that guests have come to know and love. For this transformation, the goal is to elevate that original design while preserving its deep connection to the land. The refresh introduces brighter, more modern elements, creating a fresh yet familiar ambiance for a new generation of guests. Soft neutrals, sage greens, burgundy, and blush tones, inspired by the native flora and fauna of the region, are woven throughout the redesigned furniture and upholstery. These updated details, paired with the introduction of new fabrics and fixtures, retain the soul of the original design while enhancing the visual experience.
The reimagined spaces cater to the evolving desires of today’s sophisticated travelers, featuring intimate seating vignettes that encourage both private conversations and social connection. New Tasting Menu: The refresh also brings exciting changes to JORY, The Allison Inn & Spa’s award-winning restaurant. Under the leadership of The Allison’s Executive Chef Jack Strong, a James Beard nominee, JORY is transitioning into an exclusive dinner-only tasting menu experience. Guests can choose from four, five or seven courses highlighting Oregon’s seasonal bounty with the option of pairing our cellar’s best wines carefully curated by the wine director.
In addition to the multi-course dinner tasting menu offered in the primary dining area, Chef Strong is introducing an ambitious new Native Foods Experience in the restaurant’s coveted private dining room known as the Chef’s Table. This masterfully curated nine course journey celebrates the indigenous culinary heritage of the Pacific Northwest and the Americas, elevating traditional Native American cuisine through a contemporary lens.
