The talented team behind Cayo Levantado Resort is made up of seasoned experts in the field of beverage and gastronomy, who are constantly evolving and shifting towards a stronger emphasis on cultural traditions and locally sourced ingredients. Antonio Tridenti, Executive Chef at Cayo Levantado Resort, brings a wealth of knowledge and expertise to the resort. With an extensive career in the hospitality industry, he now assists the external consulting firm of Pedro Mota Cabral, responsible for the creation of the exceptional restaurant concepts of Senda and Manaya. Working alongside him are renowned Chef Carlos Romero, who brings his wealth of experience from renowned restaurants in the U.S. and Dominican Republic, and Beverage Director and Sommelier Aneley Caceres, who honed her expertise in wine while working in London.
