Mountain View, CA — The Ameswell Hotel is excited to announce the new appointment of Chef Chad Bayless as Executive Chef of The Ameswell Hotel and ROGER Bar & Restaurant. Chef Chad joins The Ameswell A-Team from the Fairmont Hotel in San Francisco. With over eight years of executive chef experience, he brings a fresh perspective and thoughtful approach for a new creative culinary experience in the heart of Silicon Valley.
Chef Chad’s culinary career has been defined not only by creativity in the kitchen but also by his dedication to community, just like The Ameswell Hotel. Twice awarded 1st Place People’s Choice at the Hall Cabernet Cookoff in 2019 and 2022; Chef Chad combined flavor and philanthropy, raising more than $60,000 for nonprofit organizations including Swords to Plowshares and World Central Kitchen. His talents have even brought him to the esteemed James Beard House in New York, where he joined Chef Michael Wong in preparing a five-course dinner with wine pairings; a milestone moment in his career.
At The Ameswell, Chef Chad has embraced the mantle of Executive Chef, bringing fresh energy to both the hotel’s banquet experience and ROGER’s menu. His philosophy is guided by a motto he often repeats: “Slow is fast.” To him, that means taking the time to understand the existing menu and procedures and collaborating closely with staff before making meaningful changes. His vision for ROGER centers on a Californian-Mediterranean inspired menu, that celebrates seasonal ingredients and a farm-to-table ethos.
“Food is an experience,” says Chef Chad. “At ROGER, I want to honor the incredible products of our region while creating dishes that spark connection and joy. My goal is to build a menu that is rooted in the land we share.”
