Porto Ercole, Italy, September 2025: The Argentario Golf & Wellness Resort in Italy is welcoming the arrival of Autumn with a ‘Golf & Dining Celebration’ this October combining a special gastronomic menu and glorious golf over its championship course, host of the Italian Open 2025in June.
This October, as the hunting season begins, the Resort’s fine dining restaurant, Dama Dama, pays tribute to an ancient tradition that has long shaped the history and identity of Maremma, the south west region of Tuscany.
Chef Emiliano Lombardelli has created a set of dishes dedicated to local game called ‘To Diana, Goddess of the Hunt’ to reflect the changing of the season and the produce available at this time whilst the temperate October weather experienced in this part of the country will provide balmy, warm conditions for golf and a chance to build up a healthy appetite for Emiliano’s culinary delights.
The autumnal fare will showcase the flavours of wild game whilst also reflecting Lombardelli’s imaginative take on regional cuisine that highlights local ingredients and organic produce from the Resort’s own garden, alongside the best products to be found in the Maremma area.
The speciality dishes will include venison tartare with a delicate pine smoke, herb egg cream and edible flowers, local wild boar terrine with spiced bread, oranges and onions, Cappellacci di Morellino with wild pigeon in a “cacciatora” style (a traditional Tuscan hunter’s-style stew with herbs, tomato, and wine) and wild mallard duck with hay and herbs, cabbage, potatoes, scamorza and Orbetello bottarga (cured mullet roe from the nearby Orbetello lagoon).
For dessert, a traditional Tuscan chestnut flour cake, Castagnaccio Maremmano, will be enriched with a creative twist from the Chef.
The tasting journey is priced at 110 Euros per person (excluding beverages) whilst guests can also order to their taste from the à la carte menu, which – as usual – also includes fish and vegetarian options.

The restyled Dama Dama Restaurant is elegant, contemporary & intimate
To complement the cuisine, guests will have the chance to experience the recently reimagined ambiance of the Dama Dama, styled by Milan-based interior designer Andrea Fogli. The restaurant is now a blend of contemporary design, boasts an intimate atmosphere and follows a colourboard that encapsulates the Tuscan Maremma landscape.
October is also the month of the olive harvest along Argentario’s golf course. Resort guests and golfers can witness and learn a secret or two about this tradition. The resort then produces its own organic extra virgin olive oil(BioAgriCert certified), used at its restaurants.
On the golf course, thanks to its staging of the national open, the Argentario layout is in fantastic condition. The only PGA National Golf Course in Italy, guests can take on the very same 18 holes that the top professionals on the DP World Tour played in June.
