- Created by Executive Chef Michael Klicos, the new spa bistro menu features vibrant, plant-forward dishes centered on vegetables, legumes, whole grains, and healthy fats, with optional proteins like tuna and smoked salmon. Minimally processed ingredients – sprouted grains, couscous, brown rice, and seeded lavash – are elevated with house-made dressings, olive oil, nuts, and seeds. Highlights include Ikaria-inspired stuffed grape leaves, an Okinawa Bowl with sweet potato japchae noodles and miso vinaigrette, and tuna “tacos” in crisp shiso leaf shells.
- Complementing the cuisine, the 38,000-square-foot spa introduces Blue Zone-inspired treatments such as a Grapeseed Scrub, Microgreens Facial, and Olive Oil Massage.
