It is here that head chef Martino Longo cooks up soul-stirring contemporary cuisine that celebrates regional ingredients and unique seasonal flavours gathered from the surrounding mountains and beyond.

From mouthwatering Tyrolean dumplings with beetroot and gorgonzola to Saddle of Venison served with buckwheat croutons and sorrel that grows in the local forest and apple strudel, you’re guaranteed to be inspired by South Tyrolean cuisine.
By collaborating with local farmers and artisans who share the team’s values for authentic and natural flavours, and sustainability, every ingredient reflects the surrounding landscape, respects the rhythm of the seasons, and pays homage to their origins This includes ingredients such as artisanal mountain cheeses, top-quality cured and fresh meats, early spring asparagus from Terlano, and fresh fruit such as cherries, berries, and apricots from the Val Venosta and Renon. “In Val Gardena, winters are long, with snowfalls that often linger until late spring. This means that high-altitude crops are limited to a short summer period,” explains Martino Longo. To rectify this, homemade preserves are frequently utilised to keep seasonal flavours alive. “However, we can count on a solid supply from lower-lying areas of South Tyrol, which boast an extraordinary variety of fresh ingredients.”
“Among the most interesting autumnal products are undoubtedly South Tyrolean chestnuts, whose natural sweetness makes them a staple in both cooking and baking.” And, with a growing interest in plant-based diets, the resort’s kitchen has been reinventing the mountain region’s traditionally butter and cheese-rich food to vegan alternatives, including homemade seitan, fresh vegan pasta, and vegan desserts.

ADLER’s chefs have been rediscovering ancient legumes, such as borlotti beans, mountain lentils, black-eyed beans, and black chickpeas, for their extraordinary nutritional richness and versatility in contemporary cuisine. There’s also a focus on health. “For breakfast, we offer energy-packed and nutritious options, like our ‘Energy Shot’, a smoothie made with cassis, açaí, and blackcurrant berries – a perfect boost of vitality for a day of hiking or e-bike riding,” adds Longo. “The biggest challenge lies in finding that subtle balance between authenticity and openness”, says Longo.
“The goal is to maintain a cuisine that’s easily understandable and accessible to all, even those who may be tasting certain ingredients for the first time,” explains Longo. “We want to invite guests to discover our flavours, without forcing them, but rather guiding them naturally on a gastronomic journey that’s engaging yet not invasive.”
